Messages saves your conversations, so even if you turn off your Mac or start using another device, you can pick up where you left off. You can set Messages to save a conversation or delete it when you close the conversation. If you set Messages to automatically save conversations, you can close a conversation and resume it later with the conversation history intact.

• Clear all messages without closing a conversation: Choose Edit > Clear Transcript.

Is there a way to save text conversations as a document?

A co-worker has an iPhone 5 but is thinking of getting rid of it because she needs to have the ability to save text conversations (with the author's name) to a document for legal reasons. She said this was possible with some Samsung phones, but the only way to do it with the iPhone is to copy each message/thread and paste it. However, doing it this way does not copy the sender's name. The only thing I could think of is taking screenshots, but I'm not sure that would hold up in court. Any suggestions?
